Lamb chop recipes
This recipe for roast lamb chops is absolutely a concept or even a guideline and never necessarily a recipe as such. It's a rustic family meal that was probably cooked by a lot of Mama?s in outdoor wood ovens in the southern areas of Italy using ingredients they happened to get available. When you have a wood oven by all means put it to use, otherwise for the remainder of us, these roast lamb chops will be similar in results utilizing your regular kitchen oven.

You may make this dish just as simply may it be dinner for 2 or dinner for any whole crowd. Also, you don?t necessarily have to use lamb check it out with chicken, turkey and even goat pieces. And, use more or less associated with a of the ingredients to match your own taste. Tinkering with your meals are half the enjoyment!
Our favourite is utilizing lamb chops while they cook to tender perfection!
INGREDIENTS: (for 4 people)
8 lamb chops
12 -16 small whole potatoes or, a couple of large potatoes cut into wedges
6 cloves of garlic, whole or chop them roughly
Rosemary & oregano
Salt & pepper to taste
A splash of white wine & water about half a cupful of each just to keep your base moist
4 - 6 chopped fresh tomatoes or about 1 cup bottled tomato puree (do not add a lot of, sufficient to include a little colour & flavour)
A handful of grated pecorino cheese
A small couple of dry breadcrumbs
HERE'S The way to ASSEMBLE:
Roughly layer the lamb chops with the potatoes.
Poke the garlic cloves between your lamb & potatoes.
Sprinkle with fresh or dried rosemary & oregano, salt & pepper.
Pour wine & water down one side so as not to wash from the seasoning.
Scatter chopped tomatoes or tomato puree over lamb & potatoes.
Finish having a handful of grated pecorino cheese sprinkled over.
Scatter with breadcrumbs to take in any excess liquid.
Cover baking dish with foil and bake for around an hour or so at 200 Celcius. Remove foil for the remainder of the cooking time and bake until things are tender, probably another hour or so.
Which is about as fundamental as it gets!
